Exchanging Money from Tip Jar, Bartender Theft, Irregular Pour Counts, Not Ringing in Drinks

At this time, the agent observed that it did not appear that drinks were being rung as they were being served. It was also noted that none of the nearly 15 patrons at the bar had their checks in front of them in glasses. The bar was beginning to get busier as time went on, which only makes this situation more dangerous, as the bartender becomes more likely to lose track of orders and customers. For this reason, the agent cannot confirm that check and cash handling procedures were under any kind of control at all.

The agent also observed that cash was being taken from the tip jar (see photo).  It was unclear the reason for the cash, but after making a withdrawal, Xxxxxx was seen walking to the kitchen with cash in hand, then interacting in some way with a manager, and returning again to the bar with cash. The agent is unsure of the reason for this, but this is certainly outside proper operating controls. It was also concerning to the agent that the bar was left unattended several times, for as long as 5 minutes, even as more patrons arrived to be served.

When the agent was ready for the bill, Xxxxxx was observed entering the entire check at once into the POS. This was also observed for other patrons as they requested their checks. This is an incredibly dangerous bartending practice. Drinks will surely go unaccounted for by mistake or deliberately. It is a perfect method for bartenders to mask bar theft.

While observing pouring methods, the agent noted that on several drinks, Xxxxxx appeared to be either hesitant or uncertain of his pouring. Bottles were poured quickly, stopped, and then poured again and it appeared that Xxxxxx was ‘eyeballing’ the drinks rather than using any kind of pour counting.
