The agent then really focused on the work habits of Bartender 3. The agent found this person’s conduct to be questionable.
At 7:57pm, Bartender 3 served a patron a jack and water and failed to ring in the drink. He went from serving the jack and water straight over to another group of patrons to serve them drinks.
At 8:18pm, Bartender 3 made a martini for a female patron (the same female friend of the male he failed to collect a credit card from stated earlier). He indicated that he would start a tab for her, but did not collect a credit card. Bartender 2 later discovered that there was no tab open and collected a credit card.
At 8:33pm, Bartender 3 poured two double absolute and sodas for men passing through. He appeared to know the men personally. He handed them their drinks, and went on to service other patrons without accounting for the drinks on the POS or any comp sheet.
Later on that evening, the same men returned for another round. At the end of their visit, the agent saw the person paying the tab; seemingly bragging to his associate about the tab and its amount. Agent cannot substantiate fully a deception here; however, the mannerisms were quite obvious.
At 8:36pm, Bartender 3 poured red wine directly from the bottle into the wine glass for a female patron. She asked to close her tab and he quickly printed the receipt without apparently recording the pour. The agent cannot substantiate the “no ring” but due to how quickly he was able to generate a receipt it was highly doubtful.
At 9:00PM, Bartender 3 served another martini (possibly a cosmo) to the female patrons who he failed to collect a tab from in the beginning. He then failed to immediately ring in their drink.
